We believe in following the traditional Italian cooking techniques that use only the freshest seasonal ingredients. These are mainly used to enhance the natural flavours of the food.
The concept is based on a simple philosophy “From Nature to Plate” combining three aromatic ingredients, whether these are vegetables, herbs or spices. These are then slowly and gently sautéed together to provide a flavour base for other ingredients to build upon – concept that is also called The Holy Trinity of Italian Cuisine.
Italian food is bold and satisfying without being heavy. It is rich and textural and uses a whole palette of flavours. Italian food is a celebration of produce, and protein is a secondary thought.
So what consists of a typical Italian meal?
A typical Italian meal will start with a big plate of antipasti, which are predominantly vegetables. These can include pepperoncini, mushrooms, and artichoke hearts together with a selection of cured meats. The Italians love prosciutto and salami!
Then it moves on to a small pasta dish, which is followed by a light protein—perhaps a leg of lamb, simply but deliciously prepared. As the meal progresses, it gets more simple. The Italian meals tend to have a reverse crescendo.”
